In 2021, something extraordinary happened. The Consulate General of India approached Niti and Pawan with a unique and monumental task. They were entrusted with creating a 75-foot-long cake, featuring 7.5 different flavors, to commemorate India’s 75th Independence Day on August 15th, 2021. This was no ordinary cake; it was a symbol of pride, culture, and celebration.

The idea of crafting a cake of such epic proportions brought with it a set of challenges that might have daunted even the most experienced bakers. The primary concerns were logistical – how to transport, set up, and store a cake of this magnitude? But Niti and Pawan were determined to rise to the occasion, just as the cake would rise in the oven.

The function, organized by the Indo-Canada Council and graced by high dignitaries, including the Mayor of Niagara Falls, the Head of the Consulate General of India, and the MP of Niagara Falls, was set in the enchanting Niagara Falls garden. Over 1000 people gathered to celebrate this momentous occasion.

The flavors of the cake were a harmonious symphony of taste, ranging from classic Chocolate and Vanilla to the rich and robust Coffee, the zesty Lemon, the indulgent Carrot, and the sumptuous Caramel. However, the pièce de résistance was the 0.5 flavor – a tantalizing fusion of Chocolate Hazelnut and Caramel, adding a unique twist to this grand creation.
